I have seen it grown for many years. In comparison to Magento and others, Woocommerce is the best. Some of the other open source products break things after updates and one would have to rush to fix everything but Woocommerce is stable for the most part. Updates rarely break things if you have considered stable plugins and eco system. For a business, at the end of the day, they want their store up and running with lots of orders incoming.
